WBS HEATHCOTE SHIRAZ 2013
Shiraz fruit for this wine was sourced from a family-owned Heathcote vineyard at the base of the Mount Camel range. Each vineyard block was fermented separately in traditional open fermenters, and given varying levels of maceration to enhance complexity and give a wide array of flavours and textures to the final blend. Malo-lactic fermentation and maturation in new and old French oak and temperature-controlled stainless steel tanks for periods varying from six to eighteen months (dependent on wine structure) followed, prior to assemblage of the finished wine.
Deep purple in colour highlighting all of the hallmarks of a great vintage in the region. The nose shows an intense bouquet with aromas of red fruit, chocolate and leather. The palate is typical of Heathcote shiraz, rich, intense and complex with flavours of plum, blackberry and spice supported by French oak and a lingering finish.
Drinking well now.
Serve with rich red meat dishes or strongly flavoured cheeses. It is equally at home with a bbq, or a hearty winter casserole. The combination of fruit intensity and completely ripe tannins makes it versatile as a food match.
