Ravensworth Shiraz Viognier 2015
"Perfect growing conditions throughout the 2015 season have set the scene for one beautiful shiraz viognier. Headily perfumed with all manner of spice, flower and red fruit. Right on middle weight with layers of fine tannin finishing with a burst of spice.
One batch 30% whole bunches, five day maceration, warm ferment and then two weeks on-skins. Batch two, whole berry, and similar ferment dynamics. Matured in 30% new and seasoned 500l French oak puncheon. Un-filtered, un-fined.
Lamb and stronger beef cuts work with this wine. A long braised lamb shank with middle-eastern spices comes to mind as a particularly nice combo. If you are into food trucks, those small hand-made tacos filled with shredded meat, chilli and salsa would be a particularly nice way of having this wine." -- Winemakers Notes
