Peering out from under the tattered brim of a fraying felt hat, his light-coloured eyes told of mystery, of a tradition born by his great grandfather; this, the secret life of a trifulau, inextricably rooted into the argillic white soils of these majestic ageing hillsides. Borne of this very same soil, entwined within the roots of this secret cult of truffle-hunters, comes their inaugural Barolo, equally complex and mysterious. As Gary Walsh opines,"Throws a wondrous perfume of liquorice root, chocolate and dark cherries with rose oil wafting above, bottom firmly ensconced on the sweet folds of an old Chesterfield lounge. And gloriously traditional it is too – firm and sure in the mouth with a spread of fine-grained tannin allied to just the right amount of dark fruit, tea and spice.
