Hickinbotham of Dromana Chardonnay 2015
Grower producers Andrew and Terryn Hickinbotham’s winery started in 1988 with the purchase of a 15-acre vineyard in the Mornington Peninsula sub-zone of Dromana. They manage their vineyard using organic principles, which involves using natural soil-enrichment (composted winery waste) and pest-control methods. About five-acres of their property is reserved for wildlife habitat including native birds and animals. The wines are made with a minimal interventionist approach and they are all preservative free.
The 2015 vintage was generally exceptional. After heavy rainfall in winter there was mild and consistent temperatures over summer and a cool and dry Autumn produced high quality fruit.
The resulting Chardonnay is rose-gold coloured in the glass with crystalline clarity. It’s tight with developing, earthy, buttery aromas. It has a balanced palate of apricots and persistent zestiness. Partial barrel fermentation and malolactic fermentation contribute to softness, texture, and cleansing acidity and a clean finish.
