55% Gamay 30% Pinot-Noir 15% Cabernet Franc.
Calcareous clay and siliceous clay on a calcareous base.
The area has an altered oceanic climate which means the winters are cooler than near the ocean, but the higher temperature during summer stay under 25ºC.
Biodynamics methods. 20 year old vines. Yields 50 hL/ha.
The grapes are put directly into the tanks using an elevating conveyor belt, without being pumped or pressed. Only natural yeasts intervene during the fermentation process. The wine is left 7 days in the tanks with a maximum temperature of 28°C. Light cooling of the tanks, then grapes are gently pressed.
Racking and airing is done after the malolactic fermentation. The wine is cooled, then filtered and bottled in April. Keeping 10-15 years.

Accompanies well grilled meats, beef, white meats and even fish.
