Clotilde Davenne Bourgogne Blanc 2013
The balance between all the elements and especially alcohol and acidity which are extremely good.
The wine gives white flowers and white peach flavours. The mineral flavours come after taste. It is delicious either at any time.
The vines for this Bourgogne Blanc are located in the village of PREHY which is one of the 20 villages to produce "Chablis appellation". But unfortunately, when this appellation has been delimited, this place has not been included. It is in the Serein's valley but it should be considered as a Chablis wine.
The wines are young but the production is very regular. Clotilde takes care of her vineyard reasonably: not too much chemicals but just what is needed and much hand-making care.
Kimmeridgian from the Jurassic period when the sea covered a big part of the"bassin parisien".
The soil is chalked with many little oysters fossilised.
Mechanical harvesting when the balance sugar/acidity and the taste are good.
Bunches are pressed out with a pneumatic press, the juice is fermented in tank with temperature control: 100 % malolactic fermentation.
The wine is left on the lees during several months. Slow natural sedimentation.
Serve cool, not chilled.
