Les Gryphées has aromas of peaches and white flowers, while in the mouth it is both delicate and polished : here is a classically elegant wine that opens with a smooth bouquet and finishes with a note of apricots.

Grapes varieties

30% Muller Thürgau, 30% Pinot Gris, 30% Auxerrois and 10% Gewurzträminer.

Terroir

Rocky terraces, west of the Moselle River on clay-limestone soils.

Climate

Combination of continental and oceanic influences (regular rainfall throughout the year, hot summer). The hills are exposed to the south and south-east, creating a microclimate that is particularly well-protected from the cool & wet weather from the west.

Vineyards

Organic and biodynamic farming over their 12.5ha Density 5,500 stocks per hectare Yields 60-73 hL/ha.

Winemaking

Vinification

Grapes pressed in pneumatic winepress. The different grape varieties are each harvested at the time they have ripened and are vinified separately. Ageing Fermentation in oak barrels at low temperature, with local yeasts for 10 months. Malolactic fermentation, blending and bottling in May Keeping 4-5 years.

Alcohol 12.5 %

Best served at 8ºC

Food  

Shellfish dishes as well as fish either cooked in parchment or simply pan-fried. Its distinctive yet delicate bouquet will enhance dishes like freshwater fish stew, mussels marinières, monkfish in creamy white sauce.
