Vineyard - The Chalmers Heathcote Vineyard is an east facing sloped site comprised of the famous red Cambrian soils of the area. The lower vineyard from whence came this fruit, is deep red clay-loam. Chalmers aim to follow organic farming principles where possible and are transparent in their communication when it is not.
Winemaking - Half of the fruit was pressed to tank, half destemmed and left to soak for 3 days. Racked to old French oak barrels for fermentation. It was a long, slow ferment - about a month. Left on lees for 5 months, until bottling. Wild yeast fermented. Unfiltered, unfined. No adds apart from minimal sulphur.
