Vineyard - The Chalmers Heathcote Vineyard is an east facing sloped site comprised of the famous red Cambrian soils of the area. The lower vineyard is deep red clay-loam while the higher vineyard is complex rocky terrain of ironstone, dolerite, green basalt and jasper. Chalmers aim to follow organic farming principles where possible.
Winemaking - Fruit was de-stemmed, leaving the berries intact, then rolled the cap under by hand once a day. The Sagrantino, which made up about 25% of the fruit, was left wholebunch. No plunging. 26 days on skins. Basket pressed to old French oak barrels for 10 months rest. Unfiltered, unfined, wild yeast fermented.
