Gently pressed, cold stabilised and racked to new and neutral French oak. Wildly barrel fermented, lees work and loads of time in barrel. Racked after 12 months, bottled unfined and unfiltered. Not a wine for the faint hearted, a true winter warmer destined for cheese and cuddles.
